Ingredients
1/3 cup unsalted butter, melted
½ cup sugar
½ cup brown sugar
1 egg
1 tsp vanilla
1 cup all-purpose flour
½ tsp baking powder
½ tsp salt
Method
Make brown butter: Add butter to a saucepan over medium heat. Melt while stirring constantly with a whisk. Once butter is completely melted it will begin to foam and form bubbles on top. Continue to whisk constantly until very foamy. After about 5 minutes it will begin to change colour. Once you see a caramel color with brown bits at the bottom of the pan, transfer to a glass dish.
Make the batter: Combine ½ cup of brown butter (this is slightly less than you made), sugar, and brown sugar in the bowl of a stand mixer. Beat with the paddle attachment on medium speed for 1 minute. Add egg and vanilla, stir on low until combined. In a separate bowl, mix flour, baking powder, and salt. Transfer dry mix into the wet mix. Using a spatula, fold in the ingredients until just combined.
Bake the brownies: Preheat oven to 350. Line an 8x8 inch dish with parchment paper. Transfer brownie batter into the dish. Spread evenly with a spatula. Bake for 20-25 minutes, or until a toothpick in the centre comes out clean. Cool completely before slicing.
