Ingredients
For Burgers:
1 lb medium ground beef
1 tsp salt
2 tsp vegetable oil
Burger buns
Cheddar cheese, thinly sliced (optional)
Condiments (optional)
For Mac Sauce:
2 tbsp pickles, finely diced
2 tbsp white onion, finely diced
½ cup mayonnaise
1 ½ tsp sriracha
1 tsp mustard
1 tsp white vinegar
Pinch of salt
Method
Make the mac sauce: In a large bowl, combine all mac sauce ingredients. Set aside in fridge.
Make the smash burgers: Place a large cast iron pan or stainless-steel pan over high heat. Heat for 5 minutes without any oil. While pan is heating, mix ground beef and salt until fully combined. Split into four equal portions and form into balls. Once pan is very hot, add 1 tsp of oil to the pan. Place two balls on the pan at least 3 inches apart. Place a small piece of parchment over top of the balls. Using a metal spatula press down on the ground beef to press it into a thin patty, about ½ inch thick. Remove parchment and cook for 30 seconds. Flip burgers and cover with cheese. Cover with a lid and cook for another 45 seconds then transfer to a plate. Repeat with remaining burger balls.
Finish burgers: Serve burgers on buns with mac sauce and any other condiments you like.
