Ingredients
For Loaf:
½ cup cocoa powder
2 cup all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
3/4 cup brown sugar
½ cup unsalted butter, melted
2 eggs
¾ cup buttermilk (can substitute with whole milk)
3 Hershey cookie n cream bars, broken into small pieces
For Icing:
1 cup icing sugar
3 tbsp whole milk
½ tsp vanilla
Method
Make the batter: In a bowl, combine cocoa powder, flour, baking powder, baking soda, and salt. Stir then set aside. In a large bowl, add brown sugar and melted butter. Stir to combine. Add eggs one at a time, mixing between. Add buttermilk and stir to combine. Add the dry mix to wet mix and fold with a spatula until combined. Add half of the cookie n cream bars bits. Stir to combine.
Bake the loaf: Preheat oven to 350 F. Line a loaf pan with parchment paper. Transfer batter into the loaf pan and spread with a spatula so it is flat on top. Sprinkle remaining cookie n cream bar bits overtop of batter. Bake in oven for 55 minutes. Transfer to a wire rack to cool.
Ice the loaf: In a small bowl, combine icing ingredients. Whisk until smooth. While loaf is hot, pour icing over top to cover entire loaf. Slice and enjoy!
